I know green beans can be kind of boring. They're everybody's go-to veggie, and one thing that most kids will eat. I'll admit it - I have several cans in my pantry. But I love fresh green beans, and they are anything BUT boring! Take these "brown butter and garlic" green beans. They are delicious!
These are what I served to my family as part of our Valentine's Day meal. They're simple and oh, so good. Let's go!
Begin by melting three tablespoons of butter in a non-stick saute pan. (I buy unsalted butter. That way, if I'm baking, I've got it. If I'm using it to cook savory foods, I can add and control the salt content. Just easier for me to use one kind.)
Add one pound of washed and trimmed green beans. (I buy these at Costco.) Toss well in the butter.
Add your "garlics". The recipe I had called for three cloves of finely minced garlic, 1/2 teaspoon of garlic powder, and one teaspoon garlic salt. I.LIKE.GARLIC. A lot! So I added extra. I would say I increased all three by about 50%.
Toss well. Tongs are great for really mixing things up.
Saute over medium-low heat until the butter begins to brown and the beans soften a little. I still like them to have a little crunch though. Add a little water (a tablespoon or so at a time) if the butter gets too dark before the beans are done.
I did these about an hour before dinner then set them aside. I threw them on a hot eye to warm them up before serving.
I served these with creamy mushroom chicken and a wild rice blend. I'll share the recipe for the simple garlic knots soon.
